This is the first gluten-free beer to be granted label approval by the US Government. Each batch we brew is tested for its gluten contents before it is bottled and shipped. New Grist is brewed from sorghum, rice, hops, water and yeast. These ingredients are carefully combined to form a crisp, refreshing “session ale” brewed for those on a gluten-free diet, or anyone with an appreciation for a great tasting, handmade beer.

Origin of Pilsner – In the Western Bohemian city of Pilsen (Plzeň) in the Czech Republic, the beer-loving citizens were fed up with the lack of quality in their local brew, so they looked for help in neighboring Germany—specifically Bavaria—where the brewers had already earned a reputation as master beer makers. Brewmaster Josef Groll was hired to take on the task of creating a new Bohemian beer brewed with Bavarian quality. Groll chose to brew a beer using local Czech ingredients—sweet and nutty Moravian malt and lightly bitter but aromatic Saaz hops—combined with lager yeast imported from Bavaria. The Moravian malt was made in a new type of kiln which used indirect heat to produce very pale malt, and when combined with Pilsen’s naturally soft water resulted in the world’s first pale lager. In October 1842, this combination of circumstances—history, location, and technology—created a style which would grow to dominate the beer world for more than a century.

Dogfish Head Piercing Pils

Dogfish-Head-Piercing-PilsFrom the Brewer – “A Perry-Pils hybrid, Piercing Pils is a Czech Style Pilsner brewed with a White Pear Tea and Pear juice.  Both the juice and the tea were added in the kettle during the whirlpool (after the boil) for maximum flavor and aroma contribution.  The Pear fruit complexity pierces right through the spicy Czech Saaz hops beautifully, adding a gentle acidity to this pale lager that makes for a crisp refreshing sipper.  Amarillo hops add nuanced citrus notes that meld perfectly with the fruit.

Great with pasta primavera, barbecue ribs, fish tacos, soft pretzel.
