“The Illinois” is in homage to the mile high skyscraper Frank Lloyd Wright designed for the city of Chicago that was never built. Had it been built, it would still be the tallest building in the world today. Inspired by this big idea, Goose Island’s brewers crafted a beer with towering hop character.

From the Brewer – The first Imperial beer of the year is The Illinois, a 9.0% ABV 95 IBU Imperial IPA that pushes the limits of hop flavor and aroma. Deep gold, complex citrus aroma, balanced clean bitterness, medium to full body.

Great with foods Ham, Turkey, or Lamb.

Hops: Chinook, Cascade, Citra, Meridian
Malts: 2-Row, Special Pale, C-20, C-60, Cara Red

Thomas Creek Up The Creek Extreme IPA

Thomas-Creek-Up-The-Creek-Extreme-IPAFrom the Brewer – “Up The Creek is mashed in at a low temperature to increase the amount of fermentable sugars while reducing residual sweetness. This creates a hoppy behemoth of a beer with its ABV well hidden under heavy layers of malt. UTC is designed to be dangerously drinkable, so use caution or you’ll be Up The Creek!.

Food: The strong, breathtakingly hoppy echelons of this beer are really a meal in their own right. Entrees paired here should be toned down against this bold brew, selections can include smoked beef brisket, grilled lamb, Southern chicken-fried steak.

Cheese: Pair with sharp and rich American artisanal blue cheese varieties.

Dessert: This richly hopped and luxurious beer commands a delectable and sweet dessert pairing such as carrot cake, caramel cheesecake, crème brulee, rum raisin cake or toffee pudding.

Victory Hop Wallop – A Very Hoppy Ale

Victory-Hop-WallopHorace ‘Hop’ Wallop headed West a broken man. For in the City of Blues a Miss LuLu Belle Lager had left him thirsting for more. Drawn by wild tales of riches to be had in the gold mines, Hop pressed on westward. His last nickel spent on a prospecting pan, Hop’s hunger got the best of him. Two fistfuls of barley and three of some wild and wayward hops tossed in a pan with some clear water was to be his meal. But sleep overcame him and he later awoke to a bubbling, cacophonous concoction. Overjoyed with the beautiful ale that he had made, Hop realized the secret of the green-gold that he had discovered in those fresh hops. Celebrated far and wide, Hop Wallop lives on in this vivid ale with his words, “hoppiness is happiness.”

From the Brewer – “As our homage to the hop harvest, expect loads of aromatic splendor and bitter beauty. Our exotic mix of hops offers a pungent punch of mint and pine aromas. A silky malt base supports the profound hop character and adds complexity.

Great with burgers, BBQ and hard cheeses.

Ass Kisser Double IPA

Color: Medium to golden color with a tan head.
Aroma: Warm malty notes with notes of caramel, raisin and assertive hop spice and citrus oil.
Taste: Medium-full mouth feel with hop astringency with some pine resin and bitter orange pith flavor.
Finish: Long and Lingering.

The “Kick Ass” Double IPA is rich Malty ale that has warm caramel notes with citrus and pine notes. It will pair with dried fruit and nuts, sharp flavored cheeses and Asian Spiced Foods such as Chili Lemon Grass and Red and Green Curries.

Saranac Imperial IPA

From the Brewer – “Saranac Imperial IPA is part of our new High Peak Series, a line of beers that are bigger, more complex and flavorful; beers that are meant to be sipped and savored. Saranac Imperial IPA is brewed with 10 different malts and 10 different hops to make a delectably flavorful and complex Imperial IPA.

Great when served with spicy foods.

Dubhe Imperial Black IPA

From the Brewer – “Named Utah’s Centennial Star in 1996, Dubhe (pronounced Doo-bee) illuminates the front of the big dipper from 124 light years away. Dubhe, also known as Alpha Ursae Majoris, is a red giant that appears orange in color and has a mass 4x that of the sun. This beer’s toasted, chocolaty dark malts align with an astronomical amount of hops.

Sam Adams Third Voyage

This series of limited edition brews represents some of our favorite small batch creations. This double IPA is inspired by Capt. James Cook, an explorer and map maker who became famous sailing the globe.  Cook’s “Third Voyage” took place over the course over 3 years – 1776-1779.  This now infamous voyage was to discover the Northwest Passage, in which he was successful.  Cook was killed in an argument with Hawaiians during the voyage, on February 14th, 1779.  As a practice of honor at the time, Cook was disemboweled, baked and the bones removed as religious relics.  The beer however, has a slightly less morbid finish.

From the Brewer – This unique double IPA takes the style’s origins a step further.  IPAs were born out of making an ale that could sustain a long voyage.  For our take, we were inspired by the indomitable Capt. James Cook whose 3rd voyage made him the first to navigate a treacherous route from England to New Zealand to the Pacific Northwest . Using Cascade hops from each of these regions we created a brew that’s citrusy, earthy, and full of bold character.

Hops: Cascade from UK & New Zealand, Simcoe from U.S.
Malts: Two-Row Harrington, Metcalfe & Copeland Pale, Caramalt, Honey Malt
Alcohol by volume: 8%
