Barr Hill Gin


Owner Todd Hardie spent over four decades as a beekeeper before deciding to incorporate his raw, organic Vermont honey into craft spirits.  His first honey house, which required a $1,000 down payment and had a mortgage of $133 per month, was home to 180 colonies. Today, on the banks of the Lamoille River in Hardwick, Vermont (population: 3,174), Caledonia Spirits remains rooted in the traditions of sustainability and Vermont agriculture.

Barr Hill Gin is a London dry-style gin that, unlike other gins, uses only one botanical during distillation – juniper.  The rest of its complex, gentle flavor profile comes from the raw honey (made at one of Hardie’s now 1,900 colonies), which is added during a second distillation.

From the Brewer – “The gin is a celebration of our special connection to the land. We use pure grain spirits as a canvas to showcase juniper berry and raw northern honey. Added just before bottling, the raw honey imparts unique floral qualities that vary with season and blossom. Our distillery, on the banks of the Lamoille River in the Northeast Kingdom, is rooted in the agriculture of Vermont. Hardwick, Caledonia Country, is a community inspired by farms where the production of milk, cheese, timber, grains, honey, seeds, and herbs are part of our lives and help define our place.”

New Holland Knickerbocker Gin

New-Holland-Knickerbocker-Gin100 proof spirit infused with 12 botanicals; juniper berry, coriander, angelica root, orange zest, lemon zest, cinnamon, ginger root, orris root, cardamom, fennel, clove and nutmeg. Infused spirit distilled to 150 proof. Filtered through 3 particulate filters and bottled at 85 proof.

From the Brewer – “Knickerbocker Gin is a vibrant, aromatic spirit twice distilled and infused with flavors from more than a dozen herbs and spices. Generous amounts of juniper-berries contribute a bright citrus and evergreen body, bursting with flavor before a clean, dry finish. Clear aromas of juniper and citrus. Immediate juniper flavor, not overpowering but balanced with anise and ginger on entry. A medium bodied gin that finishes clean and mildly spicy.”
