This is a big beer that calls for equally big foods. Flavor notes: Citrus hops with sweet malt and subtle alcohol burn (like a kiss on the cheek) Pairs with: Extra sharp aged Cheddar and stinky Blue cheese; smoked brisket; spicy foods with chili or cayenne pepper; earthy desserts like carrot cake

From the Brewer – “This dangerously delicious recipe features often subtle, but sometimes assertive signatures of American hop varieties. Look for: Citra: heavy citrus aroma, fruity flavor; Chinook: grapefruit, resinous pine; Simcoe: dry, piney; and Mosaic: earthy and mildly floral, with notes of sweet citrus and spice.

Great with burgers, BBQ and hard cheeses.

Flying Fish Exit 16 – Wild Rice Double IPA

Flying-Fish-Exit-16---Wild-Rice-Double-IPAFrom the Brewer – “Although usually identified with landfills and pipelines, the Hackensack Meadowlands is an amazingly diverse ecosystem providing vital animal and plant habitat. In a nod to a once common food plant here, we’ve brewed this beer with wild rice. We also added organic brown and white rice, as well as pils and pale malts.

Rice helps the beer ferment dry to better showcase the five different hops we added. Lots and lots of them. We then dry-hopped this Double IPA with even more–generous additions of Chinook and Citra hops to create a nose that hints at tangerine, mango, papaya and pine. This beer pairs extremely well with spicy foods and all kinds of seafood. And of course, it’s quite enjoyable all by itself.”

Perfect with strong, spicy foods (great with spicy paella or ceviches). Sharp blue cheeses or gorgonzolas. Also pairs well with very sweet desserts.

From the Brewer – “Serum injects the Double IPA style with a fresh dose of big hop flavor. This medium- bodied amber nectar boasts a thin tan head, big hoppy floral bouquet, slippery, luxurious mouthfeel and strong 9% abv. While aggressively hoped at several stages of the brewing process, including a gradual two-week dry-hopping, Serum remains incredibly well-balanced by a smooth malt sweetness and  through to its lingering, bitter finish. First released as a seasonal beer in 2004, but now available all year round, so get your dose!”
