Flying Fish Grand Cru Winter Reserve

Scaldis Noël Strong Golden Ale

At 12.5% ABV, the little Scaldis Noël bottle contains one giant beer. It has a burnished ruby-copper color and a spicy aroma with notes of caramel and marzipan and peach. The taste is round, with hints of anise leading to a long warming finish. If it is snowing and you have a Yule-tide log—fire it up and sip a Scaldis Noël—Pieter Breughel couldn’t paint a more Belgian scene!

Great when served with Triple crème cheeses, Christmas goose, Bûche de Noël, Tarte Tatin with butterscotch cream.

Dogfish Head Raison D’Etre

Dogfish-Head-Raison-D'EtreFrom the Brewer – A deep mahogany, Belgian-style brown ale brewed with beet sugar, raisins and Belgian-style yeast.

We began brewing this one at our pub in 1996 (we began packaging and selling it sometime in 1998) as the answer to the question, “What beer should I enjoy with a wood-grilled steak?” Raison D’Etre fits the bill. It’s as tasty and complex as a fine red wine.

In the Quick Sip Clip video below, Sam talks about Raison D’Etre inside the new cellars for our 600-bbl fermentation tanks. The cellars were designed specifically to allow sterile yeast management. The system also allows us to automatically dose the yeast into the fermentation tanks. At Dogfish, we use multiple strains of yeast for our different beers, so we are acutely aware of all that can go wrong when you don’t love and protect the yeast.

Great with steak, duck, game, wine-reduction sauces, blue cheese, goat cheese, ham, mussels.

Ruckus Brewing Euphoria Ale

Harpoon Leviathan Quad

From the Brewer – “Yeasts.  A mixture of two-row pale malts, caramel malts, and special aromatic malts gives the Quad its richness and texture. The subtle hop flavor imparted from Brewer’s Gold hops lingers in the background and provides just enough bitterness to balance the malt sweetness.  The addition of imported Belgian Dark Candi Syrup rounds out the beer, giving the Quad its full body and deep auburn color.  Expect notes of honeyed dry fruit with peppery phenols in the aroma, a velvet-like mouthfeel, and a superbly drinkable beer.”

Corsendonk Christmas Ale
