Recipe: Major Toms Caramelized Onions
5 med/large yellow sweet onions
4 oz butter
1/4 cup sugar
4-6 ounces of Major Toms
salt to taste
Slice onions thin (about 1/4 inch). Heat butter in wide pan or skillet. Add onions and cook over high heat until they start to brown. Reduce heat and continue to stir onions until all the onions become evenly brown. This will take a lot of time and patience (up to two hours). Once onions are browned evenly, deglaze with Major Toms and continue to cook until the beer is cooked off. Season with salt. Onions then can be served immediately or cooled down and reheated for later.
