Recipe: Blind Faith Hominy Salad

The refreshingly hoppy bite of Magic Hat’s Blind Faith hits the high notes while the bready, deep malt body plays the bass in this tasty summer salad.

SHOPPING LIST:
1/2 cup mayonnaise
1 (12-ounce bottle) Magic Hat Blind Faith
chili powder
ground cumin
salt
2 (14.5-ounce) cans white or golden hominy
2 cups grape or cherry tomatoes
1 and 1/2 cups grated sharp cheddar cheese
1 yellow or orange bell pepper
1 cup chopped red onion
1 jalapeno pepper
1 large bunch fresh cilantro
1 lime

RECIPE FOR THE DRESSING:
1/2 cup mayonnaise
1/2 cup Magic Hat Blind Faith
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon saltRECIPE FOR THE SALAD:
2 (14.5-ounce) cans white or golden hominy, drained
2 cups halved grape or cherry tomatoes
1 and 1/2 cups grated sharp cheddar cheese
1/2 cup chopped yellow or orange bell pepper
1/2 cup chopped red onion
1 jalapeno pepper, stemmed, seeded and chopped
1 cup loosely packed, chopped fresh cilantro leaves
Juice of 1 lime

DIRECTIONS:

Make the dressing:

Whisk together all of the dressing ingredients in a small bowl. Set aside.

Make the salad:

In a large bowl, combine the hominy, tomatoes, cheese, bell pepper, red onion, and jalapeno.
Toss with dressing.
Add cilantro and lime juice and toss.
Refrigerate, covered, for at least 1 hour before serving for flavors to meld.
