From the Brewer – “Using oak to age beer is unheard of. But, the flavours imparted by the oak barrels (previously used to mature bourbon) lend an incredible depth of taste. Think vanilla, toffee and orange aromas, with a malty, lightly oaked palate; soothing and warm in the finish. Luxurious malt and toffee giving way to mellow oak with vanilla overtones. Balanced by the orange peel citrus character. Warming Floral, soothing oak with vanilla more evident, lemon zest. Pour me another!”

Silver Award – Wine & Spirit International,
Roast loin or belly of pork / suckling pig:
the sweet, juicy texture of the meat goes well with the beer’s citrus character, while its mild bitterness also offsets the salty/sweet taste of the dish. Heston Blumenthal tried this recently at The Fat Duck at Bray as part of a food and beer matching competition; it triumphed over all other beer & food combinations.
