Wacko Summer Seasonal

From the Brewer – “Wacko is the liquid song of summer: Crisp like the morning, cool like the evening and quenching all day long. Pop the top and set your summer loose. Wacko is a delicious summer beer with a big malty aroma, a subdued hop bite and a clean, slightly sweet finish.”

Recipe: Wacko Gazpacho

Ingredients:
1 tablespoon olive oil
1 clove garlic, peeled and minced
¼ medium red onion, peeled and chopped
1 small shallot, peeled and minced
1½ cups fresh steamed corn kernels, thawed frozen corn
kernels, or drained canned corn kernels
½ medium cucumber, peeled, seeded and chopped
½ red or yellow bell pepper, seeded and chopped
½ green bell pepper, seeded and chopped
1 pound very ripe plum tomatoes, roughly chopped
1 (15-ounce) can whole tomatoes, juice reserved
2 tablespoons chopped fresh cilantro, plus more for garnish
1 tablespoon chopped fresh basil
1 tablespoon or more chili paste with garlic or
hot sauce to taste
1 tablespoon balsamic vinegar
1 tablespoon orange juice
2 teaspoons honey
1½ teaspoons sesame oil
½ (12-ounce) bottle Magic Hat Wacko (¾ cup) 

  1. Heat the oil in a skillet.
  2. Cook the garlic, onion and shallot until soft.
  3. Scrape the sautéed mixture into the bowl of the food processor.
  4. Add the remaining ingredients.
  5. Process until well blended.
  6. Pour into a bowl, cover and chill thoroughly.

Purple Haze Raspberry Wheat Beer

From the Brewer – “Purple Haze is a crisp, American style wheat beer with raspberry puree added after filtration. Therefore, you may see raspberry pulp in the beer. The raspberries provide the lager with a subtle purple coloration and haze, a fruity aroma, and a tartly sweet taste.”

This beer is best served with salads or light fruit desserts, such as soufflés or chiffon cakes. Many people enjoy it with chocolate desserts. Purple Haze pairs well with certain cheeses, such as ripened Brie or any dessert made with Mascarpone. It’s also great paired with entrees prepared with fruit, especially citrus. Consider enjoying Purple Haze alone at the end of your meal as dessert.
